Trident, Costa Rican Honey is a honey-processed coffee. After the cherries are picked and the skin is removed, part of the sticky fruit layer is left on the bean while it dries. The result sits between washed and natural: caramel, brown sugar, milk chocolate, and dried fruit, with a silky body and a bright but rounded finish.
Those notes are already halfway to a cocktail. Bourbon brings its own caramel and vanilla, so it meets the coffee instead of fighting it. A small pour of coffee liqueur deepens the roast, and a quarter ounce of honey syrup ties the drink back to the way the beans were processed. A tiny pinch of salt and an orange peel on top keep the whole thing from going flat.
Brew the coffee stronger than you would drink it and let it cool all the way. A drink this smooth needs the coffee to stand up to the bourbon.
For the honey syrup, stir equal parts honey and warm water until dissolved, then let it cool. Start with less if your coffee liqueur is on the sweet side, and taste before you pour the second round.
About the honey. Honey process is a drying method, not an ingredient. No honey is added to the coffee at any point. The honey in this drink is a cocktail addition, a small one, chosen because it suits what the process leaves behind in the cup.
