The Debrief: an Extortion 17 Bourbon Old Fashioned

A bourbon old fashioned built on cold brew steeped from Extortion 17, our Sumatran medium roast, plus the concentrate recipe and a zero-proof version.

Extortion 17 is our single-varietal Sumatran, roasted to a medium profile. Full body, low acidity, earth and dark chocolate. That low acidity is the whole reason this drink works: a brighter coffee turns thin and sour once it meets whiskey, and Sumatra does not.

So this is an old fashioned with the sugar pulled back to a quarter ounce, and the coffee doing the work the syrup normally does. We do not sell a cold brew made from Extortion 17. You grind the beans and steep the concentrate yourself, which is the second recipe below.

Ingredients

  • 2 oz bourbon, 90 to 100 proof
  • 1 oz cold brew concentrate, steeped from Extortion 17. Recipe below
  • 1/4 oz demerara syrup, 2 parts sugar to 1 part water
  • 2 dashes aromatic bitters
  • 1 dash orange bitters
  • 1 wide strip of orange peel
  • 1 large ice cube

Method

  1. Chill a rocks glass and set one large cube in it.
  2. Combine the bourbon, cold brew concentrate, demerara syrup, and both bitters in a mixing glass.
  3. Fill with ice and stir 25 to 30 seconds. Cold and slightly diluted, not watery.
  4. Strain over the large cube.
  5. Express the orange peel over the surface, wipe it around the rim, and drop it in.

Use the coffee cold. Hot coffee blooms the alcohol and flattens the aromatics. Zero-proof variation: swap the bourbon for 2 oz of concentrate cut with 1 oz of water, keep the syrup and bitters, and build it the same way.

Base

Cold Brew Concentrate, Steeped at Home

Ingredients

  • 4 oz Extortion 17 whole bean, about 113 g
  • 20 oz filtered cold water, about 590 ml

Method

  1. Grind coarse, roughly the texture of raw sugar. A fine grind pulls bitterness over a long steep.
  2. Combine grounds and cold water in a jar. Stir once to wet everything evenly, then leave it alone.
  3. Steep 16 to 18 hours, refrigerated or at cool room temperature.
  4. Strain through a fine mesh sieve, then again through a paper filter.
  5. Refrigerate in a sealed bottle. Use within 10 days.

Roughly one part coffee to five parts water, which is why one ounce is enough in the drink. Our pre-portioned Cold Brew packs are a different coffee, the original BoneFrog roast, so for this one steep your own from Extortion 17.

If you steep often. The brewer we point people to is the Toddy® Cold Brew System. It is cold-water extraction: no heat at any point, a long steep, then the extract drains through a filter under its own weight rather than being pressed or forced. That slow, unheated extraction is what produces the full body and the very low acidity, and it is why cold brew tastes naturally sweet with nothing added to it.

A pound of coffee yields at least half a gallon of extract, which is around sixty drinks. The jar method above is a quarter batch of the same principle, so if you are steeping every week, the brewer earns its counter space.
